Recipes From the Community Market Kitchen

Good cooking starts with the right ingredients. At Community Market, we’re constantly trying new recipes, sharing old favorites and experimenting with new ingredients. You can find copies of our most treasured recipes throughout the store. Count on us for all the wholesome ingredients you’ll need to make these delicious dishes! Below you’ll find some particular favorites.

Texas Caviar

♦2c black eyed peas (dry), sorted and rinsed
♦1t sea salt
♦14oz can Muir Glen crushed tomatoes with basil
♦1-2 jalapeños or 1t cayenne
♦1 ear corn, sheared (seasonal)
♦1/3c red onion, minced
♦2 ribs celery, diced
♦2-3 cloves garlic, minced
♦1T olive oil
♦2T balsamic vinegar, or to taste
♦2T tamari
♦1/3c parsley, minced
♦Sea salt to taste as needed

 

Bring a large pot to a boil. Add black eyed peas and resume boil. Reduce heat and simmer for about 45 minutes, then turn off flame and allow beans to soak in hot water for an additional half-hour or so. This helps them to cook through while still maintaining their shape. Drain any excess water and ass 1t sea salt. Spread onto a tray to chill.

Sauté celery and garlic lightly in olive oil. Spread on top of black eyed peas and place the tray in a refrigerator until cold. Transfer all ingredients to a bowl and toss gently. Makes 6-8 servings.


Mango Salsa

♦ large, ripe mango, peeled and chopped
♦½ cucumber, peeled and diced
♦1/4c tomato, diced
♦1 clove garlic, crushed
♦1 jalapeño, cored and minced
♦1/4c fresh cilantro, minced
♦juice of ½ lime
♦sea salt to taste

 

Prepare all ingredients and place them in a bowl. Toss together gently for a chunky sweet salsa. Cover and refrigerate, then allow flavors to mingle for at least 20 minutes before serving. Keeps well, makes about 1 ¾ cups of salsa.
